A skinny little secret...

Do you know about SkinnyTaste?  It's a blog that has GREAT recipes, with all the weight watcher and calorie info on it!  AND they are "skinnyfied"  meaning you can eat them and not feel guilty!  Today I made these.  Everyone approved of them except for Holden, but they have nuts...what can I say?

You really should check out the blog!  I have made a ton of her recipes, I found it when I decided exercise was not going to cut it, and I had to make some dietary changes...I love that it is mostly whole foods, and I confess, I make modifications to make them more whole food like...

Our New Favorite Summer Dinner:-)

I think it was last summer when my good friend Natalie introduce me to these smoked salmon tartins.  YUM!  And then of course we didn't have them again until she brought them over a couple of weeks ago.  But it was then that I decided this was my summer meal, of course I thought, if only my kids would eat them.

But wait!  My kids like the FISH part of sushi, no rice, no roll, just the RAW FISH on top...hmmm, and they both LOVE salmon...so why not try it!  Oh yeah it was a hit, what a great meal!  No cooking required!  AND EVERYBODY eats the same thing!  wow!

they are super simple.  Bread, cream cheese, or Brie in our case, smoked salmon, tomato, avocado, red onions (which we omit when Natalie is not here:-)), salt and pepper.  YUMM-O!  Just perfect after an evening in the pool...did I mention we are in the pool EVERY night?! We are so blessed by this house, it's still hard to believe we live here.

Proof mom and dad that he DID eat it, just in case I try to serve it while you are here and he refuses;-P

Easter Cookies

Tante Beth found a recipe for Easter basket cookies that she thought the kids would enjoy...so we got them together and tried to make them...as Tom stated when we got home, "I thought you were making cookies, where are they?" Well, um, in our bellies...and no its not due to the pregnant mamas in attendance :-) The kids really only had the patience to make 0ne each and then eat them, and then the moms made one each and then ate them...and then it was probably nap time:-)

MJ was VERY serious as always when it comes to the sweet things...



More seriousness...you know it involved chocolate...so it was a serious endeavor...and the handle of the basket was licorice...each little one went through SEVERAL handles...

MJ...notice no handle even made the picture in hers:-) Gotta love that girl! It was fun times...and will get even more fun as they get older and enjoy the process more:-)

Steak

And the boy who doesn't eat meat, ate steak tonight and "yiked it!" He finished it too, with the promise of some ice cream dessert...steak and corn on the cob:-) Made in the crockpot of course!

If you have a crockpot and never use it check out this blog... 365 crockpot ...I have used my crockpot more in the past month than in the 7 years of our marriage...and everything I have made has been a hit! Currently I am checking out the summer recipes :)
